Pistachio Processing
Our pistachio processing is designed as a fully controlled and sequential system, where each phase plays a critical role in ensuring product quality, food safety, and functional performance.
By managing the entire process internally, from raw pistachio to advanced value-added products, we can deliver consistent specifications, traceability, and reliability across all applications.
Our facility in California is dedicated to the sourcing of raw materials of Californian origin, supported by continuous and direct collaboration with local farmers and agricultural partners. Equipped with drying and roasting systems, the plant is designed to supply industrial-grade solutions for pistachios and almonds. This structure enables us to ensure consistent quality, reliable volumes, and customized products tailored to the needs of industrial processors and food manufacturers.
In Dubai, our operations are structured across multiple facilities, each dedicated to a specific phase of processing. Two plants focus on shelling, cleaning, selection, and the first processing steps into pistachio diced products and pistachio flour. These facilities serve as a key hub for semi-finished products, supporting regional and international supply programs. A newly opened facility is fully dedicated to advanced transformation. Here, we produce pure pistachio and almond pastes, white bases ideal for confectionery creations, and a range of spreads developed specifically for retail and supermarket channels.
Turkey represents the birthplace of Kahraman, where the company was founded thanks to the strong roots of the Cikmaz family and their long-standing experience in the agricultural and trading sector. Our facility in Mersin reflects this heritage and follows the same origin-driven philosophy that defines our operations worldwide. Through direct and long-term relationships with local farmers and trusted suppliers, we secure pistachios grown in Turkey and neighboring countries one of the world's most strategic pistachio-producing regions. This deep connection to the territory, combined with decades of know-how, allows us to ensure continuity of supply, full origin traceability, and competitive sourcing, while preserving the values and expertise on which Kahraman was built.
Our logistics hub in Italy plays a strategic role in connecting our origin-based operations with European markets. Thanks to its central location, the Rome facility allows us to actively serve and develop the Italian market historically our most important reference point while efficiently supporting commercial activities across Europe. This logistics presence enables faster distribution, greater flexibility, and closer dialogue with customers, reinforcing our ability to respond to market needs and strengthen long-term commercial relationships throughout the region.
